They say that your best, most treasured recipes are written on a dusty, soiled paper. Mine is written more than 10 years ago and I keep on going back – referring to this recipe as this recipe has never let me down.


This recipe was shared to me by my ex boyfriend’s aunt as she loves cooking as much as I do. 🙂 I wrote this recipe probably in 1999 or 2000. 🙂 Here’s Tita Norma’s version of leche flan.
Recipe:
1 dozen egg
4 cans evaporated milk (big)
1 can condensed milk
1 kilo white sugar
1 tsp vanilla
1 1/2 tsp washed sugar for each llanera (caramelized)
Procedure
Beat the eggs. mix in milk sugar and vanilla. mix well. remove bubbles from the mixture.
In each of the llanera, place 1 1/2 tsp sugar. caramelized the sugar by placing your llanera on your stove under low heat. Make sure not to burn the sugar.
Pour 1 cup of the mixture to each llanera (or until llaneras are 4/5 filled). Cover each llanera with aluminum foil.
Prepare your steamer. Make sure water is boiling before steaming the mixture in the llanera. Steam for 30 mins.
